Welcome to the June edition of the Ibis Newsletter!

This week marks the last competition of the 2023-24 school year as our track and field squad heads to the University of Oregon for the NCAA Outdoor Championships. Thank you to everyone in the department for providing our student-athletes the resources and support they need throughout the year.

I hope you take some time this summer to relax and recharge with friends and family. Fall camp for football, soccer, volleyball and cross country will be here before we know it.

Have you had a "Welcome to The U" moment? If so, what was it?
My “Welcome to The U” moment happened before my first day even started; on the drive in, I passed The Light with The []_[] and championship flags flying high, parked, and walked through the Hecht halls embossed in orange and green and I knew I was home.

What led you to work for the Hurricanes?
Being a Hurricane alumnus is something I am extremely proud of and to be able work in UM Athletics is an incredible full circle moment for my career.

Who would you consider your biggest mentor?
I have been very fortunate to have a few great mentors in my career, but I must spotlight Mike Mullane, fellow Canes alum (from my time with the Miami Marlins), and Scott Levine (from my time with the Florida Panthers) for really helping me grow and hone my skills.

Any family notables to share? Where are you from?
I’d love to shout out my wife, Rebecca, who is also a Miami alum. Born and raised in New York, although Miami has been my home for 16 years now.

What are you looking forward to most as a new member of The U?
I very much look forward to helping the University of Miami navigate the ever-changing landscape that is college athletics alongside the amazing team here.

Healthy BBQ and Grilling Ideas for a Nutritious Summer

Summer is the perfect time to fire up the grill and enjoy delicious BBQs with family and friends. With the 4th of July just around the corner, it's a great opportunity to incorporate some healthy and tasty options into your grilling menu. Here are some nutritious BBQ ideas that will keep your taste buds satisfied and your body feeling great.

Lean Meats

1. Grilled Chicken Breast: A classic choice that's high in protein and low in fat. Marinate chicken breasts in a mix of olive oil, lemon juice, garlic, and herbs for a flavorful and juicy result.
2. Fish Fillets: Grilling fish like salmon, tilapia, or mahi-mahi is a healthy and delicious option. Season with a simple mix of olive oil, lemon, and herbs, or use a spice rub for a bit of kick.


Veggie Skewers

1. Colorful Veggie Kabobs: Load up skewers with a variety of colorful vegetables like bell peppers, cherry tomatoes, zucchini, mushrooms, and red onions. Brush with a light marinade of olive oil, balsamic vinegar, and herbs before grilling.
2. Grilled Portobello Mushrooms: These meaty mushrooms make a great vegetarian alternative to burgers. Marinate in balsamic vinegar and garlic, then grill until tender. Serve on a bun with your favorite toppings.
3. Corn on the Cob: A BBQ staple that's easy and nutritious. Brush corn with a little olive oil and sprinkle with sea salt before grilling. For extra flavor, try a squeeze of lime juice and a sprinkle of chili powder.


Healthy Marinades

1. Citrus-Herb Marinade: Combine fresh lemon or lime juice, olive oil, minced garlic, and chopped herbs like parsley, thyme, or rosemary. This light and zesty marinade works well with chicken, fish, and vegetables.
2. Yogurt-Based Marinade: Mix plain Greek yogurt with spices like cumin, paprika, and coriander. The yogurt helps tenderize meat and adds a delicious tangy flavor. Perfect for chicken and lamb.
3. Honey-Mustard Marinade: Blend honey, Dijon mustard, apple cider vinegar, and a bit of olive oil for a sweet and tangy marinade that pairs well with both meats and veggies.


Final Tips

1. Balance Your Plate: Fill half your plate with grilled vegetables, a quarter with lean protein, and a quarter with whole grains for a balanced and nutritious meal.
2. Hydrate: Keep water or infused water readily available to stay hydrated, especially in the summer heat.
3. Enjoy in Moderation: It's okay to indulge in your favorite BBQ treats, but try to balance them with healthier options.

Redland Summer Fruit Festival – June 22

Kick off the season with an assortment of South Florida’s sweetest all-natural treats.
